Storage Condition

The difference between Taiwan tea and Tieguanyin tea lies in the thorough drying degree. Taiwan tea, generally with less than 5% water content. It can be stored in vacuum for 12 ~ 24 months. If you want to keep it in the refrigerator, please vacuum it and then put it in the refrigerator to avoid the occurrence of flavor escaping. After taking it out of the refrigerator, please wait for the temperature to return to room temperature and then open the vacuum package to avoid dampness.
Storage temperature: below 25℃. Relative humidity: below 50%.



What Is Dayuling Oolong Tea? 

Dayuling Oolong tea area is located in Hehuan Mountain of Taiwan province, with an altitude of over 2200 meters. It is the origin of oolong tea with the highest growing altitude in the world. The high mountain oolong tea produced is mellow and fragrant, which is generally considered to be the best source of high mountain tea in Taiwan. Dayuling is a new high mountain tea producing area in Taiwan, and the tea produced has been recognized as the best high mountain tea in Taiwan. The main reason for the popularity is that it is located in the high mountain of 2600 meters, where it is cold and the temperature difference is large. In this environment, tea trees grow slowly, so the tea quality is young and the tea taste is mellow. In addition, the local acidic soil with good drainage, the unique environment creates a unique good tea.

After brewing dayuling Oolong tea, can taste the fragrance of flowers which is clear and fragrant. Because it is semi-fermented, the tea taste is refreshing, can feel its delicate, color, aroma, taste, sweet, quickly and has layers, the fragrance does not return to the tongue. 

How To Make Dayuling Oolong Tea?

Cold brewing method

Step 1. Scoop 1 teaspoon of Da Yu Ling Oolong tea (About 5~7g) put into 150ml ~200ml teapot.
Step 2. Pour 100~150ml Hot water @95 to 97 °C to wash the tea leaves quickly ( within 10s) then pour out the waste water.
Step 3. Pour cool pure water @0 to 10 °C to steep tea leaves and storage teapot in fridge .
Step 4. Serve after 24 hours storage in fridge.

Hot brewing method

Water temperature 

Because dayuling oolong tea contains some special aromatic substances that need to be fully developed at high temperatures, it must be brewed with boiling water of 95 degrees C. 

Tips: When using 95 degree C water to make small leaf or tender leaf oolong tea, the soup steeping time must be controlled within 20~40 seconds.

Steeping time

Brewing time of high mountain tea is generally steeping in the first 45 seconds or so, brewing again is about 60 seconds. After each brewing the time can increase with a slight 10 seconds. In Northern Fujian and Chaozhou, oolong teas steeping time should be lesser,just taking 15 seconds for the first brew.

Tips: The specific tea soup steeping time depends on personal taste, mainly depends on the tea maker's own control.

Brewing Times

High Mountain tea has the saying of "Lingering fragrance after 7 steepings", normally can be brewed more than 10 times if operate properly.

Teapot Selection and tea leaves amount

The teapot type is selected according to the number of tea drinkers, and the amount of tea is determined according to the capacity of the teapot (normally 7 ~ 10 grams). If the tea is tightly knotted semi-spherical oolong, needs to account for 1/3 to 1/4 of the volume of the teapot; If the tea leaves are loose, fill half of the pot.

Pottery and porcelain is prefered, Yixing Clay teapot (such as purple teapot) or Jingdezhen porcelain  Gai wan are better choices.
