1. What is Jin Jun Mei Tea?
Jin Jun Mei tea is the finest of all green teas, produced in the Fuding area, Fujian Province. The specialty of this tea is that you can find two leaves and one bud on each shoot. This means that only completely opened tender tea buds are picked during harvest.
2. History of Jin Jun Mei Tea
The exact origin of this tea cannot be found but it has been known to exist for more than 300 years. It was named by a renowned person who lived during the Kang Xi Dynasty (1662-1722) in Qing Dynasty ( 1644 - 1911 ). At first, it was only available within China; however, exports increased after 19 century, when other countries started to take an interest in this exquisite tea.
3. How to make a pot of Jin Jun Mei Tea?
The best way to make Jin Jun Mei tea is by using a Gong Dao Bei teapot.
Step 1. Fill the pot with water (about 8oz.) and set it on the stove to heat up. water temperature is about 160 - 170 F.
Step 2. Measure the right amount of tea leaves for a pot (about 3 ~4 grams). Make sure to use high-quality tea leaves.
Step 3. While waiting for the water to boil, place the tea leaves into the Gong Dao Bei teapot and tap it lightly to settle the leaves, and then place in a strainer over a cup.
Step 4. When the water boils, turn off the stove and wait for about 30 seconds.
Step 5. Pour the boiling water into the Gong Dao Bei teapot, put on the lid, and wait while the tea is "blooming" for 20 seconds.
Step 6. Pour out all of the water from the Gong Dao Bei teapot and serve the tea.

People would say the way to drink Jin Jun Mei is by drinking it when it's hot, preferably when the temperature is about 100 degrees celsius. The reason for this is that when you drink tea at lower temperatures like 80 degrees Celsius or below, you wouldn't be able to fully appreciate the complexity of its flavor. But one important thing to note is that Jin Jun Mei tastes different at different temperatures, so you might have to experiment a little bit to see what temperature suits your taste the best.

Generally speaking, Jin Jun Mei of different grades contains 0.5%-1% caffeine. And the final caffeine of the highest grade of 5% can be reached. In addition, the tea polyphenols content of Jin Jun Mei is lower than that of black tea and green tea, but it is still higher than white tea.
