7. How is Phoenix Oolong tea different from other oolongs?

Other Taiwanese oolongs like Baozhong (Pouchong) or Jin Xuan (Milk Oolong) are light and floral, whereas Phoenix Dancong is woodsy and smoky.

Phoenix Oolong is also unique in that it is a “Dan Cong” tea. This term refers to the way the leaves are grown – scattered in open fields instead of in neat rows. This allows for a wider range of flavors and aromas.

8. How to make Phoenix Oolong tea?

When you brew Phoenix Oolong tea, always use a gaiwan or Chinese teapot. We recommend that you never use boiling or near-boiling water. Instead, use water that is heated to around 185 degrees Fahrenheit, letting it sit for about 30 seconds before pouring. The leaves can infuse multiple times, so brew them until they stop producing flavor.

Step 1. Rinse the tea with hot water to warm your gaiwan or teapot.

Step 2. Fill both your gaiwan or teapot and the serving pitcher about a third full of hot water, then pour it out.

Step 3. Put one teaspoon(about 3~4g) of Phoenix Dancong Oolong into the gaiwan or teapot for every 200mL of water.

Step 4. Steep the tea leaves by pouring hot water into your gaiwan or teapot, fully immersing them, and immediately pouring out the liquid (known as “washing”). The first steep should last 30 seconds to one minute. Subsequent steeps should only last about 10 seconds.

Step 5. Pour the tea from your gaiwan or teapot into the pitcher, then serve. You can drink it straight or add milk and sugar to taste.

The ideal temperature for boiling Phoenix Oolong tea is between 80-90 degrees Celsius (176-194 degrees Fahrenheit). If you are using a stovetop, it is recommended that you use medium-high heat. If you are using an electric teakettle, it should be set to the highest setting.

Brewing Tips:

- Use high-quality water, such as spring or filtered water.

- Preheat your teapot or gaiwan by rinsing it with hot water.

- Use about 3 grams of tea leaves for every 200 milliliters of water.

- Steep the leaves for 30~60 seconds for the first infusion, then 10 seconds for subsequent infusions.

- The ideal temperature is 80-90 degrees Celsius (176-194 Fahrenheit).

9. How long can I store Phoenix Oolong tea?

To get the best flavor out of your Phoenix Dancong Oolong, we recommend using it within two years of purchasing it. Tea tastes best when brewed and served fresh, so we suggest you brew and drink your tea within 6 months of purchase.

10. How much caffeine content is in Phoenix Oolong tea?

Phoenix Dancong Oolong tea has about half as much caffeine per cup as straight black tea. It contains around 25-75 milligrams of caffeine (depending on the length of your infusion) per 200mL cup.
