The plucking, as you might expect, is the first step in making a jasmine tea. It's important to select only the youngest, greenest leaves and buds for this delicate tea. The leaves are then dried – a process that can take up to 48 hours. Once they're dry, the leaves are ready to be scented with jasmine flowers.

The jasmine flowers are picked at night when they're at their most fragrant. They're then added to the tea leaves and left to soak for several hours. The longer they soak, the more intense the flavor will be. After soaking, the leaves are steamed and rolled into small balls. It's important to store it in a cool, dry place to preserve the flavor. 

 

How to make Jasmine Tea (White Snow Princess)?

Scoop 1 spoonful of Golden Needle Jasmine Flower green tea and throw it into your glass teacup. Water should be at least 80 C, but not 100% boiling or else it will hurt the buds! Steep for 2-5 minutes depending on how strong you want it; more time means stronger polyphenols in taste however too long will make it astringent. Finally, enjoy your delicious cup of tea!

Some Jasmine variants can be brewed using up to 5 grams of tea leaves per 200 ml water, but this recipe uses a single teaspoon so it's easier to remember. Using too much tea will make the beverage bitter and unpalatable. Experiment with different steeping times to find what you like best – a good rule of thumb is 2-5 minutes for white teas.

Brewing jasmine tea is easy, and once you've got the hang of it you'll never want to drink plain old black or green tea again! The delicate jasmine flavor is perfect for those lazy afternoons when you need something to help you relax. Be careful though – this tea is so delicious it's easy to overdo it and wind up feeling drowsy.

Brewing: Note: on the first infusion, use boiling water and infuse for 30 seconds or more depending on how strong you want the final infusion to be. Gradually reduce temperature for later infusions. Infusion time: 2-5 minutes.
