what is Junshan Yinzhen tea?

Junshan Yinzhen tea is one of the rarest yellow teas in China. It is grown on Junshan Island in Dongting Lake, Hunan Province. It was reportedly created by accident while Lu Yu, the founder of Teaism and author of Cha Jing (The Classic of Tea) drank Junshan Silver Needles with master Zhao Shude in the Song Dynasty. Zhao Shude was not pleased with the taste and commented that it was like "drinking boiled water." Lu Yu is said to have replied, "There are many ways to brew tea, but only one way to boil water."

Zhao Shude then took some tea back to his workshop and tried to improve the flavor by adding a little more salt. The result was a delicate and fragrant tea with yellow liquor.

Junshan Yinzhen is available in both loose leaf and compressed forms. There are six grades that indicate quality, with #1 being the highest grade. Grades 1-5 are greenish-yellow in color while grade 6 tends to be more yellow. The higher grades are more fragrant and have a stronger flavor.

How to make Junshan Yinzhen tea?

To Brew Junshan Yinzhen, it is better to use clear mountain spring water. tea set appropriate with transparent glass, glass height 10 ~ 15 cm, 4 ~ 6 cm in diameter at the top. With every cup of tea leaves for about 3~6g, The brewing process is as follows:
(1) Enjoy tea leaves

(2) Clean teaware

(4) Water pouring
